  • 1 tbsp oyster sauce

  • 1 tsp mixed spice or allspice

  • 1 tsp cumin

  • 1 clove garlic, minced

  • 1 tbsp olive oil

  • Salt & pepper to taste

For the Filling:

  • 1/2 cup quinoa (cooked)

  • 1/2 cup rice (cooked)

  • 1/2 red or green pepper (chopped)

  • 1/2 cup sweetcorn

  • 1 small onion (chopped)

  • 1 tomato (diced)

  • 1/4 cup grated cheese (optional)

  • A handful of lettuce leaves (shredded)

  • Juice of 1 lime

  • Fresh coriander (chopped)

For the Sauce:

  • Your favourite burrito sauce, salsa or our favourite sour cream!

For Assembly:

  • 4 large tortillas

Instructions:

The Mushrooms:

  1. Preheat the oven to 180°C (350°F).

  2. Clean the oyster mushrooms and tear them into bite-sized pieces.

  3. In a bowl, mix the soy sauce, oyster sauce, garlic, olive oil, mixed spice, cumin, salt, and pepper.

  4. Toss the mushrooms in the marinade, ensuring they are well coated.

  5. Spread the mushrooms on a lined baking tray and bake for 30-45 minutes, turning halfway through, until browned and slightly crispy at the edges.

The Rice:

  • Cook the rice, once done, set aside.

The Veggies:

  • Heat a little oil in a pan and sauté the chopped onions, peppers, and sweetcorn until soft and fragrant (about 5–7 minutes). Add salt and pepper to taste.

Assemble the Burritos:

  1. Warm the tortillas in a pan or oven for a few seconds until soft and pliable.

  2. Lay each tortilla flat and spoon a layer of rice, sautéed vegetables, and oven-baked mushrooms down the centre.

  3. Top with diced tomatoes, shredded lettuce, grated cheese (if using), and a sprinkle of fresh coriander.

  4. Squeeze fresh lime juice over the filling and drizzle your favourite sauce over everything.

Wrap and Serve:

  1. Fold in the sides of the tortilla, then roll it up tightly to form a burrito.

  2. Serve immediately with extra lime wedges or salsa on the side.

  3. Enjoy your delicious and healthy oyster mushroom burritos!
